Charles Dufour had a first traditionalist approach to viticulture and then almost immediately gave way to organic farming. His Champagnes reveal immense authenticity, reflecting the character of the terroir of the Côte des Bars.
Charles Dufour's "Bulles de Comptoir # 8 - stillleben" is a Champagne from the Cote de Bars obtained from a blend of Pinot Noir, Chardonnay and Pinot Blanc. Fermentation occurs spontaneously with indigenous yeasts. The aging in Burgundian pièce and large barrel continues. No clarification, no filtration before being bottled. Harvest 2017 with a 15% reserve wine from 2010 to 2016. Without added sulphites.
With organic and biodynamic viticulture, and great winemaking skills (all wines are unfined and unfiltered), Dufour's champagnes are voluptuous, structural, and flavoursome; all of these are characteristics which veteran Champagne drinkers do not associate with Brut Nature Champagnes.
