The grapes are hand-harvested and destemmed. The juice ferments in 3 year old 600 liter barrels for about 17 days, in contact with the skins for the first 2 days. Elevage takes place in the same barrels for 15 months. The wine is bottled unfiltered, unfined, and with zero sulfur added.
