The grapes are hand-harvested and added to the fermenter as whole bunches. The bunches ferment semi-carbonically in 5000 liter stainless steel tanks for about 10 days.  Elevage takes place in 10 year old 225 liter barrels The wine is bottled unfiltered, unfined, and with zero sulfur added.
