The MV Fût de Chêne (base 2012) is a total stunner.
Rich, sumptuous and beautifully layered, the 2012 captures all the depth that is such a signature of Aÿ Champagnes. Lemon confit, chamomile, white and yellow flowers, vanillin and a kiss of new French oak fill out the wine’s expansive frame effortlessly. Above all else, though, the 2012 retains terrific freshness for such an overt style.
The current release is based on 2012, with 30% reserve wines and a blend of 80% Pinot Noir and 20% Chardonnay. Dosage is 7 grams per liter. Tasted from magnum. Drink from 2018-2028, tasted by Antonio Galloni in July 2018.
