The 2019 Sato Sauvignon Blanc is a new one, and one that won't be repeated.
The fruit was hand picked, then whole bunch pressed after overnight skin contact. The gently pressed juice was wild fermented in mostly aged oak barrels and a small portion of stainless steel. Blended after 10 months, the wine was bottled unfiltered and unfined with just 12 mg/L sulphites.
The palate is intense and genuinely ripe, but the acidity still taut and present. The finish is dry, saline and refreshing.
